Pour Over Brewing Guide

Tools Needed:

Pour over brewing device

Coffee Filter (use size #2)

Freshly roasted coffee ground for auto-drip (medium grind)

Scale (preferred)

Kettle 

Mug

Step 1:

Bring approx. 20oz of water to a boil

Step 2:

When using a #2 filter, wet the filter with hot water and then dump the water before proceeding to brew. A clean filter allows for purest flavor.

Step 3: 

Measure out 1oz of coffee and place in the filter inserted in the brewing device. 

Step 4:

Pour the water at a slow and steady pace, just enough to dampen the grounds, but not enough to make them float. Allow the coffee to "bloom" for 30 seconds. Stir the grounds.

Step 5:

Pour water over the grounds again, in a spiral pattern. Do not overflow the filter with too much water as this will cause an under-extraction from the grounds on the sides of the filter. Some designs do well with a slow, continuous pour while others prefer incremental periods of pouring.

Step 6:

Repeat the process, pausing between pour, until you have 10oz or 350g of coffee brewed. This should fill your cup.

Notes:

Use filtered water heated to 195-205°F

Pouring in one spot unevenly extracts the coffee and makes the drink inconsistent.

Pouring too quickly can flood the filter, forcing under extracted grinds through or overflowing the carafe.

The coffee should be ground to be like course salt.
