"El Santo" The Saint

Guatemala El Santo comes from smallholder producers in the El Cerrito and Los Verdes communities of the Fraijanes region — an area named after the “Juanes Friars,” who introduced coffee to these highlands more than 200 years ago. Traditional varieties such as Bourbon, Typica, Catuai, and the Guatemalan native Pache Comun are still cultivated today, preserving the classic character that has made Guatemalan coffees known worldwide.

Grown between 1,200–1,700 meters above sea level in sandy loam enriched with fresh volcanic ash from Pacaya Volcano, this coffee reflects the balance and complexity of its environment. Mineral-rich soils, cool mountain temperatures, and careful smallholder farming create a cup that is structured yet refined — with layered sweetness and a clean finish.

El Santo is sourced from approximately 50 smallholder farmers working within two cooperatives, each farm averaging about five hectares. The supply chain emphasizes traceability, offering detailed information on producer lots, fermentation times, drying schedules, and quality control data — a reflection of the region’s commitment to consistent improvement.

Processing takes place at Beneficio San Victor in Los Verdes, a family-owned wet mill operated by the Molina family since 1990. Located between Los Pinos Lagoon, Cerro Redondo Volcano, and Lake Amatitlán, the mill blends modern efficiency with traditional care. Updated equipment helps conserve water while maintaining quality, and direct feedback to producers helps refine cultivation and processing with every harvest.
